personally, if i were you, i'd keep it simple and start with a single 51 IDA. it may not flow the most, but it has time on it's side. it's proven! i'm not trying to discourage experimentation, but if you're just starting out on this road, i can tell you that tuning twins requires skill and it's probably not where you want to begin.
however, if you're dead-set on the idea of going with twins, you may want to start with 40s. i would tend to think 36s might be small for bridgeys. i, too, think twin 48s would be overkill, but i honestly don't know.
