okay, so say I were interested in converting my 87 rx7 over to carburetion. What is involved in the process? Obviously, pulling the EFI system off and its wiring systems, keeping only the minimums for the gauges to work, ignition to work, fuel pump to prime and work, etc. What is involved?

The obvious things I can think of are:
fuel regulator to run pressure down to a lower level
carb manifold & carb
distributor ignition setp
some type of throttle linkage
......

what else? Have I even gotten close?

I've done a little bit of looking and havent found a "to-do" list on parts and methods of the conversion. Just something Im looking into.

Car is an 87 RX7 n/a with all smog equipment removed, 5 & 6 ports removed, RB header w/o cat, etc etc, running stock EFI system.

You've got the basic idea of what it takes. As for the fuel pump, it would be better to swap to a lower pressure pump, rather than just adding a regulator and using the EFI pump.
RB sells an intake to fit the 6P 13B using a holley carb. I have one of those on a GSL-SE, with an edelbrock 600. Aside from needing to fine tune the carb, it runs quite well.
RB also sells side draft carb setups for the 6P 13B, but they use the stock lower intake.
There may be many other companies that make/sell various intake setups for the 6P 13B, but I don't have any names off the top of my head.

I'll save you some headache on the fuel pump selection. Go with a GM TBI fuel pump. Reasons why i made this selection: 1. Their cheap. 2. Easy to find. (in stock at any auto parts store) 3. In-Tank mounted. and 4. Low enough pressure to regulate down to recommended pressures. (think they're around 12psi)
