I wanna put my carpet back down today and reinstall all my interior. When you wire in the fuel pump just the positive runs to the relay and you can put the ground anywhere yeah? Or do I have to run the ground back up to the relay as well?

As long as the current has a path to flow when the relay is closed and no path when the relay is open, you are good to go.
The fuel pump typically is wired with the positive going through the relay, as the positive comes from the fuse block and it is near the ECU which is controlling the relay, while the ground is easily attached in the rear to the body.
Don't attach the negative to the fuel tank, run it up to a good chassis ground.
